Miso Savoury Breakfast Oats

I’m OBSESSED.

One thing about me is I will either eat the same thing for 100 days in a row or get bored immediately. And I can confidently say I am still obsessed with these savoury breakfast oats.

They’re super easy to make, ready in less than 15 min, and I just can’t get enough.

Miso Savoury Breakfast Oats Recipe

What you need

  • 1/2 Cup Oatmeal

  • 1/4 Cup Grated Zucchini (Can sub for carrots or another veggie)

  • 1 tsp (ish) Miso Paste

  • 1/2 tsp (ish) Better Then Bouillon

  • 1 Cup Water (sub for Broth if omitting Better Than Bouillon)

  • Soy Marinated Eggs

  • Kimchi

  • Furikake

How to make it

  1. Mix oatmeal, zucchini, miso paste, Better than Bouillon (or broth), and water. Cook according to oatmeal instructions. (I find rolled oats are best, as they’ll cook about the same time as the zucchini. If you do instant oats you may want to pre-cook your zucchini or veg.

  2. Top with Soy Marinated Eggs, Kimchi, Furikake

  3. DONE

Told you it was easy :)

Notes: If you omit the zucchini, you may need a bit more water. (Or adjust water if you like softer/harder oats!)
